UBC Ponderosa Cake


Fluffy, moist, and chocolate-y! This recipe is best banana cake you'll ever eat - promise!

Here's the recipe for a tall 8" round cake:

1/2 cup butter, softened
3/4 cup granulated sugar
1 egg
1/2 tsp vanilla
3/4 cup mashed bananas (2 large bananas or 3 small bananas)
1 1/2 cups flour
1 tsp baking powder
1 tsp baking soda
1/2 cup yogurt
1/2 tsp cinnamon
1/4 cup brown sugar
3/4 cup chocolate mini chips

Cream the butter with granulated sugar until fluffy. Then add egg, vanilla, and bananas. Sift flour, baking powder and baking soda. Add to banana mixture with yogurt in equal parts. Pour half of batter into greased pan. Mix cinnamon and brown sugar. Sprinkle half of mixture on top of batter, and half of chocolate chips. Repeat layers. Bake at 350F for 40-45 minutes or until cake tester in middle comes out clean.

Recipe may be doubled.
